Replacement option is possible in some circumstances (there are few events during production which may lead to replacement).
Concerning walking actor is a bit tricky from game mechanic perspective.
You need to replace such person and it cannot be done in normal form like in film production - there are few reasons for this (so it will be limited only to person with contracts).
The second it is very intrusive for player. You really do not like that in every second film some actor will leave your plan. It sound good on paper but would really pis off the players 😉
